Raspberry Squares

- 2 cups of Flour

- 2 teaspoons of Baking Powder

- 1 1/2 cups of Butter (1 cup at room temperature, 1/2 cup melted)

- 4 Eggs

- 2 tablespoons of Milk

- 2 cups of Sugar

- 4 cups of Coconut

- 2 teaspoons of Vanilla

- 1 cup of Raspberry Jam

 

Sift the flour and baking powder.  Cut 1 cup of the butter into the flour mixture.  Add 2 beaten eggs and the milk.  Spread the mixture over the bottom of an ungreased 9-inch by 13-inch pan.

 

Cover the mixture with the raspberry jam.

 

In a separate bowl, mix 2 beaten eggs and the sugar.  Add a 1/2 cup of melted butter, the coconut and the vanilla.  Spread the mixture over the top of the jam.

 

Bake at 350 degrees for 30 minutes until golden brown.

 

NOTE:  Even coconut haters have a tendency to enjoy this dessert!
